Forget low-carb versus low-fat—the future of nutrition may lie in metabolic flexibility. Dr. Jason Fields, a metabolism researcher at Stanford University, is championing a new way of eating that optimizes the body’s ability to switch between fuel sources. “Metabolic flexibility means your body can efficiently switch between burning carbs and fat,” explains Dr. Fields. Most people, he says, are stuck in carb-dependence, unable to access fat for energy. This leads to constant hunger, fatigue, and stubborn weight.
